Tasting notes/Noon Eclipse/2005:
JK Chocolate Truffles..... what a strange thing to include at the end of this Eclipse wine tasting note we hear you say.........well, two of our longterm friends Jim and Luanne Koper who live in New Jersey, USA make truffles. These are not like any other truffles we have ever tasted and during the 2011 Hospice du Rhone wine event in California, Jim and Lu gave us a box of their hand made truffles produced using our 2005 Eclipse wine to make the ganache centre. The truffles were so amazing we were compelled to make a tasting note for them.
The truffle is quite big and the appearance is a dark, semi gloss black brown chocolate colour. Being hand made, the outer spikiness coating varies but generally pretty spiky showing lots of hand work. Luanne prefers them spikier. In the mouth, the exterior chocolate is superb, lots of cocoa flavour and not too bitter or sweet.....then the shell melts to reveal the ganache inside which is of a much softer consistency. Here, the delicious berry and poached plum flavours take control of your palate. There is the hint of red wine vinosity along with beautiful balancing acidity that gives a fresh, clean finish which is long and balanced. We could still taste the flavours five minutes after the truffle had been eaten. Outstanding.
